Mushrooms, spinach and wild rice

Delicious meal on a cool night!

  • 1 lb Fresh mushrooms (Or re-hydrate dried mushrooms!)
  • 2 tbsp Sesame oil
  • 2 tbsp Olive oil
  • 1 large Onion Finely diced
  • 2 tbsp Garlic Minced and crushed
  • 2 tbsp Ginger Grated
  • 2 Green onions Thinly sliced
  • 2 tbsp Tamari or soy sauce
  • 2 tbsp Rice vinegar
  • 2 tbsp Dry sherry or dry white wine
  • 1 Cup Wild rice Cooked (Or use black beans or another protein!)
  • 2 Tbsp Sesame seeds Toasted
  • Pinch Red chili flakes
  • 1 Bunch Spinach Fresh - coarsely chopped
  • 1 Lime Cut into wedges
  • Salt To taste
  • Pepper To taste


  • In a large skillet, heat the oil. Sauté onions, garlic, ginger, tamari sauce, vinegar and wine for about three minutes. Add the mushrooms, chilies, rice, beans or other protein (if using). Simmer for five minutes. Add spinach and allow to wilt for two minutes, stirring constantly. Add salt and pepper to taste. Garnish with sesame seeds and lime wedges.
